Butterscotch Banana Bread Rocks!

OK - I'm feeling a little perkier now. Thank you Sudafed Sinus Headache (and nap time)!

The Butterscotch Banana Bread I made was yummy. It would be even better with less sugar. I can't remember where I got the recipe - some online board or magazine somewhere. It's about 4 pts. a serving

Here's the recipe:

Butterscotch Banana Bread
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 cup mashed bananas (2 large bananas)
3/4 cup sugar (could be less - I'd go 1/2 C next time)
1 large egg
2 large egg whites
1/4 cup canola oil (I used unsweetened applesauce)
1/4 cup skim milk
1/2 cup butterscotch chips

Preheat the oven to 350 degrees F. Coat a 9X5X3-inch loaf pan with nonstick cooking spray. Combine the flour, baking powder, baking soda, cinnamon, and nutmeg in a bowl; set aside. In a mixing bowl, combine the mashed bananas, sugar, egg, egg whites, and oil, blending well. Add the flour mixture alternately with the milk to the banana mixture. Stir in the butterscotch chips. Pour into the prepared loaf pan. Bake for 50 minutes to 1 hour or until a toothpick inserted in the center comes out clean. Cool in pan.
