Cooking Hits & Misses - July!

I haven't been feeling food lately. I'm not sure why. Early in July, I was on a bit of a cooking roll. Later in the month, food just didn't sound good. I didn't feel like cooking, I didn't feel like eating -- although, I certainly still ate. I'm not one to miss a meal. Mainly because if I do miss a meal, I get massive headaches and feel absolutely miserable.

I did make some pretty good stuff this month. I would say my absolute favorite was the tilapia with roasted corn relish. It was one of the easiest recipes I made AND best tasting.

Phenomenal (would make again)
  • Tilapia with Roasted Corn -- (Every Day with Rachael Ray February 2009) -- This dish took 10 minutes to make and included 4 ingredients. It was really good - and healthy too!
  • Salmon with Roasted Shallots and Roasted Radishes (Clean Eating July 2011) -- This was delicious! It was essentially chopped shallots and radishes tossed with olive oil and herbs (I believe rosemary and thyme). They get baked in the oven for a little while then you add the salmon and top the salmon with sliced oranges. I really liked the roasted radishes - it mellows the flavor and almost transforms them into a different vegetable.
  • Cheeseburger Pizza (Clean Eating July 2011) -- I thought this was easy and good!

  • Baked Ziti with Summer Vegetables (Cooking Light August 2011) -- this was a little too bland for my taste - I think it would be delicious with some Italian sausage.
  • Pizza! Pizza! Egg Mug (Hungry Girl 300 Under 300) -- this was a quick and easy way to get more protein for breakfast. It wasn't the best tasting thing I've ever eaten though!
  • Spicy Blue Potato & Corn Salad (Appetite for Reduction) -- this was a vegan recipe, but since I'm not vegan, I thought it needed some feta cheese or goat cheese!

  • Kohlrabi Vegetable Soup (Clean Eating magazine) -- This was OK - just a little bland!

Sorry - it's taken me some time to find!

Ingredients
*olive oil cooking spray
*8 shallots, halved lengthwise, roots left intact and outer layer discarded
*18 radishes, trimmed and halved lengthwise (quartered if large)
*1/2 T olive oil
*1/2 tsp sea salt, divided
*fresh ground black pepper to taste
*1 sprig rosemary
*1 sprig thyme
*2 oranges, divided
*4 5-oz salmon fillets, skin on
*1 T chopped fresh mint or basil

Instructions
Preheat oven to 425F. Line large rimmed baking sheet with foil and coat with cooking spray. Place shallots and radishes on baking sheet, drizzle with oil and sprinkle with 1/4e tsp salt and pepper. Toss to combine, then spread in a single layer. Add rosemary and thyme and roast in center of oven for 12 minutes, stirring once.

Thinly slice 1 orange. Push veggies to edges of baking sheet and place salmon in center, skin side down. Season with remaining 1/4 tsp salt and pepper. Cover each fillet with 1 or 2 orange slices. Return baking sheet to oven and cook until salmon is opaque at thickest part, 15 to 17 minutes.

Zest remaining 1 orange; set zest aside. Halve orange

Remove baking sheet from oven. Discard roasted orange slices. Using a spatula, lift salmon fillets away from their skin; discard skin. Divide salmon among 4 plates. Squeeze juice from 1 orange half over salmon (save remaining half for another use). Discard herb sprigs and transfer shallot-radish mixture to a med. bowl. Toss with orange zest and mint. Divide among plates with salmon and serve.

I forgot about the squeezing at the end and used all the oranges on the salmon. It was still good!
